Light Einkorn Sponge with Vanilla Bean Pastry Cream and Fresh Organic Strawberries.

Simple, the way a cake should be. Our sponge is made with freshly milled Einkorn and leavened only by incorporating air into the batter, the old-fashioned way. We cover it with a generous layer of our house-made vanilla bean pastry cream (dairy-free!), made with cocoa butter and real Madagascar vanilla, and topped with fresh organic strawberries. We use only a little unrefined organic cane sugar, so what you taste is fresh fruit and vanilla. It’s the perfect level of sweetness, never too sweet. Made from scratch.
